You can roast/bake wild carrots. Some people wrap them in foil first. I bet they would be great around a pot roast. Or for something sweet you can glaze them in maple syrup before cooking. Basically they are good any way. In another or my posts you will see them glazed in balsamic vinegar and stir fried on top of rice.

Hey, just found your blog while searching up info on the wild carrot.

I'm interested in it as a cooking ingredient, rather than as a birth control pill... I'm just a little bit curious about is which is the best way to cook it? What ways have you tried? I love roasted (or is that baked? English is not my native language) "normal" carrots. Do you think that would work well with wild carrots as well?

I don't mind if the picture gets used, but these wild carrot roots are so insanely huge from growing in a loose soil heap that it might be confusing to someone looking to identify a typical wild carrot.

Is there any chance you could post your picture on Wikipedia? The article for "Wild Carrot" is sadly lacking in a picture of the root. The article is here: http://en.wikipedia.org/wiki/Daucus_carota
(Or you could just give permission for Wikipedia to use it and someone else can do it for you)
